Blueberries with Mascarpone Cheese
- Butter – 2 tsp
- Dough bread – 4 slices
- Lemon zest – ½ tsp
- Thyme leaves – 1 tsp
- Brie – 4 ounces
- Mascarpone cheese – 4 ounces
- Baby arugula – 1 cup
- Blueberries – 4 cups
- Lemon juice – 2 tbsp
Take a medium saucepan and place blueberries in it.
Add 1 tsp fresh thyme leaves, ½ tsp grated lemon zest, and 2 tbsp lemon juice and cook on medium-high heat until the mixture comes to a boil.
Stir occasionally and reduce the heat to medium. Allow the mixture to simmer for about 20 minutes until it is thick.
Allow the blueberries to cool.
Preheat the oven to 375 degrees Fahrenheit and grease one side of each slice with butter.
Grab a hot skillet and place the buttered side down and cook for 2 minutes without turning over.
Use an ungreased sheet and add the buttered slices. Apply a thin layer of mascarpone cheese to each slice and top it off with 2 tbsp of the blueberry mixture.
Split the brie and place it on top of the blueberry spread.
Bake the sandwiches for 10 minutes in the oven and transfer them to the serving plate.
Top it off with ¼ cup of arugula and honey (optional). Serve hot.
Blueberries with Mozzarella Cheese
- Butter – 1 tbsp
- Whole wheat bread – 4
- Honey – 1 tbsp
- Blueberries – ½ cup
- Mozzarella cheese – 2 to 3 ounces
- Apple slices – 6
Preheat the oven to 400 degrees Fahrenheit and lightly grease one side of each bread with butter.
Add honey to two of the slices (non-greasy side) and add blueberries to the top.
Next, add a layer of cheese and a few apple slices and add more cheese on top if left.
Top up the two slices with the remaining two slices while keeping the buttered side up.
Cook the sandwiches until they are golden brown. You can use a skillet and medium heat.
Transfer the slices to the oven and bake for 5 minutes until the cheese melts.
Remove from the oven and let it cool down before serving.
