 If I’ve learned anything over the past 37 years, it’s to trust my instincts.

Every. Time.

That messiness though has landed me in some pretty kick-ass situations.

It’s also kept me from dating psychopaths. Granted me the good sense not to walk down alleys at night. And given me the confidence to make important decisions – like whether I should wear full-bums, half-bums, booty shorts, a thong, or nothing at all.

Not to brag or anything, and I know I’ve said it before, but my intuition has guided me to some pretty amazing friends. They’re the best in the world. It’s helped me nurture a business that allows me to live and work wherever there’s a wifi signal. And no one tells me when to put on pants but me. And let’s be honest, pants should always be optional.

There are months when I don’t know if I’ll make rent. There are days when people assume all I do is play on Facebook and nap every day. And living in the unknown can be super duper pee your pants unnerving.

She’s at something of a crossroads – a sort of “to be or not to be” situation.

It got me thinking about my upcoming 6-month trip to Thailand and how I don’t know a sweet-baby-Jesus thing about Thailand. I don’t speak the language. The only food I know to be Thai, is Pad Thai. I’ve never been to SE Asia. And I haven’t even backpacked or traveled alone before.

Scary? Hell yes. I’m a highly anxious person and am terrified, most of the time.

…And it’s living on my terms.

But it’s also really simple. We get one shot at this, and not a lot of time. Just because something is scary doesn’t mean we don’t act. Acknowledge the fear, thank it for protecting you, and then do it anyway.

I think we’re all in a constant flux of do or do not. At least there’s comfort in knowing we aren’t alone.

To the nay sayers, I say: Trust the universe. Be present. You do you. There is no “try.” And damn right I nap every day.

I kind of love my life.

All the messiness. All the adventure. All the tequila…

Besides, tomorrow is overrated.

And that’s why THIS day should start with something delicious. And decadent. And just a little bit naughty.

They’ll be giving away free Cuervo Margarita doughnuts that day, and then they’ll be available Friday, February 23rd – Saturday, February 24th for $2.50 each, at their stores in Portland, Eugene, Denver, and Austin.

Dudes. I know not all of you can go get a doughnut, so I’m bringing the doughnut to you. Or at least the flavours. The Cuervo-infused vanilla frosting, lime dust and white sprinkles you’ll find on the pastry inspired the lime margarita recipe you’re about to indulge in.

I know, sounds weird right?

I promise, it’s worth making. It’s a curious flavour of sweet and salty that will keep you coming back to lick more.

Which, let’s be real for a second here, is a classic sign of a good match! Be it cocktails, doughnuts, or Tinder dates.

Just trust it.

Classic Lime Margarita with Vanilla Salt

Total Time 10 mins
Servings 1 cocktail

Ingredients
  

  • 2 shots fresh lime juice approx 2 - 3 limes, plus 1 lime wheel or wedge for rims & garnish
  • 1 Tbsp vanilla salt
  • 1 shot Cointreau
  • 2 shots Jose Cuervo Especial Silver
  • 3/4 shot simple syrup
  • Ice

Instructions
 

  • Slice a wedge of lime and rim glass.
  • Lightly dip into the vanilla salt and twist. Gentle shake off excess. Set aside.
  • Place the remaining ingredients in a cocktail shaker. Fill with ice. Cover. Shake until your arm hurts (about 20 seconds.)
  • Fill prepared glasses with fresh ice. Strain margaritas over ice.
  • Garnish with lime wheel or wedge. Bottoms up!

Notes

To make vanilla salt: Slice a vanilla bean in half and scrape out the seeds with a spoon or pairing knife. Place in a mason jar, along with the bean, and 1/2 C Maldón sea salt. Cover. Shake. Let sit for 12 hours to a full week. The longer it sits, the more intense the vanilla flavour will be. Use within 1 month.
To make simple syrup: Place 1 C water and 1 C white sugar in a small pot over medium heat. Stir regularly until warmed through and sugar has dissolved. Cool completely before using. Store in fridge and use within 2 weeks.
