Pie with Strawberries and Raspberries:

Ingredients:

  • 2 1/4 CUP FLOUR (ALL-PURPOSE)
  • 1/2 Tsp. salt
  • 1 stick unsalted butter, chilled and cut into cubes 1/2 cup (1 stick) unsalted butter, chilled and cut into cubes
  • Cold 1/3 cup vegetable shortening
  • 5–7 tablespoons ice water
  • 2/3 Cup sugar
  • 5 Tablespoons cornstarch
  • 1 Driscoll’s Strawberries (16 oz.) package
  • Driscoll’s Raspberries (6 oz.) 1 package
  • 1 tablespoon vanilla extract or 2 tablespoons brandy
  • 1 tablespoon unsalted butter, sliced into tiny chunks
  • 1 large beaten egg yolk

Instructions:

  • ADD 1/2 teaspoon salt to 2 14 cup all-purpose flour in the bowl of a food processor.
  • PULSE until everything is well blended.
  • ADD 1/3 cup chilled vegetable shortening and 1/2 cup (1 stick) chilled unsalted butter.
  • PULSE the mixture until it looks like coarse crumbs.
  • PULSING until dough begins to come together, add 5–7 tablespoons ice water, one tablespoon at a time. Do not overmix the ingredients.
  • DIVIDE the dough into two equal parts, one slightly larger than the other.
  • CHILL for at least 30 minutes after forming each dough portion into a disc and wrapping it in plastic wrap.
  • ROLL OUT the larger dough disc to a 12-inch circle on a lightly floured work surface.
  • CAREFULLY TRANSFER dough to a 9 12 inch pie pan, leaving the edges untrimmed.
  • Refrigerate pie shell until ready to use.
  • In a separate bowl, combine 2/3 cup sugar and 5 teaspoons cornstarch.
  • STIR TO COMBINE thoroughly, then SET APART the sugar mixture.
  • HULL 1 package (16 oz.) strawberries and CUT small berries in half; quarter or third larger berries.

PLACE

  • In a large mixing bowl, cut strawberries and add 1 package (6 ounces) raspberries, as well as 2 tablespoons brandy or 1 teaspoon vanilla extract.
  • STIR the sugar mixture into the berry mixture until it is completely mixed.
  • REFRIGERATE the fruit combination till needed.
  • Preheat the oven to 400 degrees Fahrenheit.

  • Preheat oven to 350°F. Place pie on a cookie sheet to catch any drippings.

BAKE

  • Cook for 45–50 minutes, or until the berries are bubbling and the crust is golden brown.
  • Allow at least 2 hours for the pie to cool on a wire rack before serving.
