  • 8 tbsp. unsalted butter
  • 1 cup sugar
  • 1 teaspoon vanilla extract (almond extract can be substituted)
  • 2 eggs, big
  • 1 cup all-purpose flour
  • A quarter teaspoon of baking powder
  • A quarter teaspoon of salt
  • A quarter teaspoon of cinnamon
  • Fresh blueberries, 1/2 cup
  • 1/2 cup fresh cherries

Directions

  • Preheat oven to 350℉. Line an 8″ metal square pan with parchment paper that extends up the sides so that the dessert may be removed once it has baked. Using a stick of butter or butter spray, grease the parchment paper.
  • Melt the sugar and butter together in a medium saucepan on the fire. Stir constantly with a whisk for about 5 minutes, or until the mixture is smooth. Give the mixture one more whisk before adding the vanilla extract. Turn off the heat and set aside for a few minutes to allow the mixture to cool before proceeding to the next step. If the mixture cools entirely, reheat it to lukewarm before pouring and working with it in the next step.
  • Pour the butter, sugar, and vanilla mixture into the pan. In a big mixing basin, slowly whisk in the eggs while continuing to stir the mixture. Combine the flour, baking powder, salt, and cinnamon in a mixing bowl. Combine all of the ingredients in a mixing bowl. To make the cake bar batter, carefully fold in the fresh blueberries and cherries.
  • Transfer the batter to the pan with a spatula. Bake the berry cake bars for 40-50 minutes, or until golden brown on top. The outside of the bars will cook faster than the middle, which is fine and adds to the chewy texture. Keep the bars in the oven for a few minutes longer if the middle of the batter appears to be very wet. The consistency should be similar to that of a brownie.
  • Allow 15 minutes for the cake bars to cool after they are finished. Remove the dessert from the tray and set it aside to cool for 15 minutes more. After that, cut into bars. Nine bars will result from two cuts in each direction. Refrigerate the fresh cherry and blueberry cake bars for up to three days. (They’re also delicious cold!)
