All of us have our favorites when it comes to cake. However, it might be too sweet and fatty for others. It’s not everyone’s cup of tea to eat their cake with a dollop of whipped cream and a handful of fresh berries in the middle. Butter (also known as a “short” cake) and foam are the two most common types of cakes. Then there are many subcategories within each category. In terms of fat content, the two cakes are vastly different. Shortened cakes contain either shortening, butter, or oil. (A classic yellow cake is a good example.) Foam cakes are light and airy because they are made with whipped eggs (whites, yolks, or both) that have been whipped. Like the Buche de Noel (Christmas cake), this is a rolled sponge cake.

1. Yellow Butter Cake
A sheet-cake version of this dessert is often served at children’s birthday parties, topped with chocolate frosting and rainbow sprinkles. It’s common for yellow butter cakes to be made with an electric mixer and then the dry and wet ingredients, but there are also “dump” versions where all of the ingredients are simply mixed together in the bowl.
2. Carrot Cake
This shortened cake is baked with baking soda and baking powder and uses oil as its main fat instead of butter. The cake is enriched by the addition of grated carrots. Warm spices and a rich cream cheese frosting complete the flavor profile of carrot cake. Pecans or walnuts can be added if desired!
Unlike traditional sponge cakes, this one doesn’t use any artificial leaveners (baking powder or baking soda). Its volume is entirely derived from whipped egg whites or whole eggs. This cake can be soaked in flavored syrup, layered with whipped cream and smashed berries, or rolled in the Christmas classic, Buche de Noel.
3. The Genoise Cake
In Italy and France, a sponge cake is known as a Genoise. Egg yolks, whites, and sugar are whipped together until they form a mousse-like consistency in this cake. Next, flour and either oil or butter are incorporated into the mixture. Compared to its sponge cake cousin, this type of sponge cake is softer and fluffier.
4. Light Cake
It’s a hybrid of sponge and oil cake, with a light, airy texture. With the addition of oil and egg whites, it has the same richness as shortcake, but it is also a lot airier.
5. Coconut Angel Food Cake
Using only whipped egg whites for leavening, angel food cake is the lightest of the light. To keep the cake’s light texture, bake it in an angel food cake pan and cool it upside down (in the pan). An angel food cake has a sponge-like texture because of its high sugar content.
6. Flour Cake
Both baked (like cheesecake or flourless chocolate) and unbaked (like mousse or unbaked cheesecakes) desserts fall under this umbrella category. There may or may not be a bottom crumb crust in these cakes because of the high-fat content.
7. Butter-Style Cake
Pineapple is a traditional ingredient in this butter-style cake, but it can be substituted with other fruits such as plums, pears, or blueberries. Cake batter is spread on top of the toppings, which are often made with butter and sugar. It is then flipped over so that the fruit is on top.
8. The Devil’s Food Cake
The addition of cocoa powder in the form of cocoa powder makes this cake “devilish.” Adding more baking soda to the crumb results in a more airy and light texture. Buttercream or chocolate frosting can be used to adorn this decadent cake.
9. The Doctor Bird Cake
Classic oil cake in the South is made with banana, pineapple, pecans, and a tangy cream cheese frosting. In the 1960s, “Doctor Bird Cake” made its way to the United States from Jamaica.
10. The Opera Cake
This cake has layers of coffee-soaked almond cake, espresso-flavored buttercream, bittersweet chocolate ganache, and the second layer of rich chocolate ganache. You won’t be able to get enough of this pastry, which is both light and decadent.
11. Baltimore Lady Cake
