One of our specialties is hand-held pastries called galettes. We typically make one sweet and two savory versions daily. Early in a crop’s harvest, when the yield is low but the flavor superb, we enjoy highlighting it in a galette. A sweet galette may be a few slices of perfect Suncrest peaches, a sprinkle of sugar and a dot of butter. On the savory side, the galette might be a more refined composition, such as our house-made chutney with uncured ham galette. Occasionally, it’s an opportunity to show our sense of humor like the spaghetti squash and meatball or the French onion soup galette. We figure: if it’s good on a plate or in a bowl, it’s great baked in a round of pie dough. Galettes are $4.50 each and are good for sharing or for a single hearty snack.
